I have decided to choose Medicare Supplement Plan G. Does it matter which provider within Plan G I choose? Some are much cheaper than others

That’s because some are priced on your current age, presumably 65 when you start — but grow more expensive as you age. Others are more expensive to start, but rise less in the future. The insurance companies know what they are doing!
